Does milk and white malt vinegar work for buttermilk?
There is no buttermilk in the shops near where I live, so I have been reading that I can make a substitute with 1 cup of milk and 2 tbsp of white vinegar, but the only white vinegar I have is white malt vinegar. Will this work?
Malt vinegar is strongly flavored, so it would depend on what it’s for. Use your judgment on how much stronger your bottle it is than white vinegar.
I’d try mixing it and see what I got (take the chill off the milk by microwaving it for 10-20 seconds to help the curdling) and if doesn’t scream malt vinegar buttermilk, I’d try it.
You could use lemon or lime juice instead of vinegar, if you have it. Really you just need the acid to ‘sour’ the milk. You’re not going to end up with anything that resembles or tastes like buttermilk using vinegar or juice, but it will serve the same function in cooking. I use it to make waffles since I don’t keep buttermilk at home.
